Chocolate truffles its chocolate confectioneries which name derives from their traditional shape, which resembles the truffle fungus. Traditionally their made from a chocolate ganache center (mix of chocolate and cream) coated in chocolate, cocoa powder or chopped nuts or coconut. Today here’s a recipe of delicious chocolate truffles with mascarpone cheese. They have so incredibly and gentle taste!!!

Ingredients:

150-200 g (1/3-1/2 pound) of dark chocolate (50% cacao or more)
250 g (½ pound)  of mascarpone cheese
1-2 Tablespoon of coffee-espresso (sweet and cold)
1-2 Tablespoon of cognac, rum or whiskey
2-3 Tablespoon of cacao powder

Let’s get started!

  1. Chop the chocolate and melt in a water bath till smooth.
  2. In a medium sized bowl mix mascarpone, coffee and cognac. Add melted chocolate and thoroughly mix till nice and smooth. Place our cheese-and-chocolate mixture in a bowl with a wide bottom. Let cool to the room temperature and then place to refrigerate for 3-5 hours or to the freezer for 30-40 minutes.
  3. Sift cacao onto a wide flat plate. Make small balls from chocolate-and-mascarpone mixture, and roll them in the cocoa.
  4. Chocolate truffles are ready!!! You might eat them immediately or keep in the fridge and serve later with coffee or tea.
